The Dolomites have an ancient and spectacular history, they are actually not mountains at all but coral reefs that once lay at the bottom of the Tethys Sea. The vast peaks are limestone, that were hewn by wave erosion over centuries to give them the jagged and spectacular summits they are today. They are known locally as the ‘pale mountains’ due to the lightness of the limestone and were officially protected by UNESCO in 2009. Rapidly becoming renowned as one of the top skiing and snowboarding destinations in the world, the dramatic runs caused by this topography are a huge attraction. There are eighteen suites and twelve chalets including four family chalets of eighty-five square metres. Suspended at the top of the South Tyrol these spacious chalets are warm spacious spaces built from sustainable wood. Designed by Hugo & Hanspeter Demetz who worked alongside Rudi Perathoner from Selva to create an alpine hideaway high up in the Dolomites that mixes luxury and low impact design for a luxury skiing experience. Founded on the site of the former Hotel Mendizi in 1999 the property was completely reinvented to create the Adler Mountain Lodge in 2014.

The twelve south facing chalets are crafted from spruce wood and give the quintessential chalet experience. Natural produce and real food is fundamental to the kitchen of Hannes Pignater and his dedicated team. He innovatively combines the taste of the South Tyrol with modern techniques to create a sumptuous array of earthy haute dining. Lamb succulently slow roasted in hay and an array of indigenous flowers and herbs find their way into the dishes. The Italian influence of hand made pastas and authentic home kitchen cooking also play a part in his creations. Sourced locally from the mountain farmers and growers each day brings fresh menus filled with the freshest flavours and ingredients. Guests wake up to fresh eggs sprinkled with mountain herbs, fresh mueslis and sausages of the region to set them up for a day in this beautiful landscape.
